Our lambs are usually 40-60 lbs hanging weight. Processing ranges from $60-$100 per lamb.
A boneless leg is butterflied and easy to grill. Leaving the bone in adds more flavor and nutrients.
Shoulder roasts are nice tender roasts . Shoulder steaks can be grilled like the chops but have more marbling.

Stew meat can actually be flash cooked like in stir-frys, etc. It just has more connective tissue than kabob meat
We love lamb shanks. Excellent braised and slow cooked with onions and red wine!
